About
Richard Fouquet and his wife Karine cultivate eight hectares of family owned vineyards in the villages of Cramant, Chouilly and Oiry in the Côte des Blancs. Their work ethic is one of minimal intervention and low yields which has been passed on from previous generations. Each plot is vinified separately, displaying the main characteristic of the soil in Champagne: chalk or ‘Craie’ as it is known locally. The Côte des Blancs is dominated by a soft, porous chalk, which contributes to giving the wines their famous minerality. The wines of Champagne Guiborat have little dosage (2.5-5g/l), this allows for a pure expression of Chardonnay which is crisp and precise. The wines are aged on their lees in underground chalk cellars found directly beneath the winery, starting at 33 months for ‘Tethys’ and up to 44 months for ‘Prisme’. They are then aged for a further period post-disgorgement, proof of Richard and Karine’s dedication to achieving the highest quality. Available in Spain through Caskadia since 2020!
