About

Marc Soyard oversees all work in the vineyard and cellar at Domaine de la Cras, located on a plateau above Dijon. The climate here, above the Côte de Nuits, is cooler and the limestone soils result in lighter AOC Bourgogne Rouge and steely AOC Bourgogne Blanc. Marc adopts a hands-off approach, thanks to organic practices in the vineyard, minimal use of SO2 and whole bunch vinification. His wines are pure and unadulterated. Domaine de la Cras in fact belongs to Dijon town council and Marc was selected, after carrying out an apprenticeship at Domaine Bizot, to live on site and care for the vineyards, in turn allowing him to make and commercialise the wines himself. Interestingly Domaine de la Cras is the only estate permitted to use the designation Coteaux de Dijon. Top wine ‘Cras’ is made from the estate’s best exposed vines, and these wines undergo longer ageing in barrel. Marc also produces Hermaion, a Bourgogne Rouge from his own vines planted near Ladoix, and cuvées L’Equilibriste and Montreluc. Since Marc took over this vast estate in 2014, plantings of Pinot Noir and Chardonnay have increased from eight to over eleven hectares, with a maximum age of thirty years. These wines have built up a very strong following, and they need no introduction for lovers of natural Burgundy.
